Converting in-shell pecans to nutmeat

Some easy formulas to use: (all conversions are approximate)

  • A pound of in-shell pecans will yield 2¼ cups of nutmeat.
  • Twelve pecan halves will yield 3 tablespoons of chopped nutmeat.
  • For a pound of nutmeat, you will need 2½ pounds of in-shell pecans.

should I store or freeze pecans in the shell or out ? How long will they keep in the freezer?

Reply: The general rule of thumb is 6 months in the refrigerator and one year in the freezer. Add six months to each for inshell.
